Ingredients
(for four people)
. 1 ½ kilos of green beans
. A piece of pancetta
. Garlic, oil, vinegar and salt
. A bit of streaky pork or unto (aged, salted pork belly fat)
Preparation
Place the beans in a pot with the streaky pork or unto and cover with water, add salt.
Fry the finely chopped garlic in a pan and add the pancetta in chunks. When this is cooked add a drizzle of vinegar.
The beans are served in a dish with the contents of the pan poured over. You may also add chorizo and eggs.
