Ingredients

(for four people)
· 2 glasses of rice
· Four pieces of conger fin
· Garlic, parsly, onion
· Pepper, saffron and salt
· Sweet paprika
· Oil
· Water



Preparation

Cut the fins into small pieces, making sure no bones are present. Marinade in garlic, parsly and salt.
Choose an oven dish or casserole to cook in, that will also act as the serving dish. Add the oil and very finely chopped onion and leave to brown for a while. Add the pieces of fish. In a glass of water mix the pepper, saffron, salt and sweet paprika and this is also added. Bring to the boil and then add three glasses of water and the rice. Cook over a low heat and taste for seasoning and shaking the pot so it doesn't stick.

The dish can be garnished with strips of pepper.
