Ingredientes

(for eight people)
· 1 ½ kilos of beef foot
· A piece of beef stomach
· 1 garlic head
· 1 small onion
· 1 kilo of chick peas (castillian)
· streaky pork
· Chorizos
· Cumin, spices for callos, sweet paprika, chilli and salt


Preparation

The day before preparing the dish: Wash the chick peas and leave to soak with plenty of water. Wash the beef foot and above all the stomach and leave these in lemon juice, vinegar, garlic and parsly overnight.

On the day of preparation: Add the chick peas, beef foot, stomach, streaky pork, peeled garlic and peeled whole onion to a pot, add salt. Generously cover with cold water (this will later evaporate).

Cook over a high heat and only use wooden utensils to stir, so the chick peas won't harden. When the chick peas are nearly cooked,remove the streaky pork, chop and fry off in a pan to melt the fat away. Pour the fat over the pot. Add the chorizos (sliced), cumin, spices, sweet paprika and chilli.

Taste, and when everything is cooked turn off the heat. It's served in a dish with the sauce.
