Ingredients

(for four people)
· 1 ½ kilos of pork fillet
· 100 grams of pig fat
· Lemon (juice)
· ½ glass of hot water
· Salt


Preparation

Thorughly emove the fat from the pork fillet and tie with fine string in the shape of a roll and add salt.

Add the pork fat to an oven dish and place in the oven. When hot place the pork fillet on top turning it so that it browns on all sides.

When browned sprinkle with hot water and roast for approximately an hour and a half, until tender (at 175 C) Sprinkle some lemon juice over it and, turn off the oven and leave for five or ten minutes. Then thinly slice it.

The left over sauce is placed in a sauce dish and later poured over the sliced pork.

It can be served in a round dish, garnished with lettuce leaves and tomato, or also with fried or boiled potatoes.
